Fried Zucchini Chips!

Hey all!

Said I would be back with another zucchini recipe! This one is just too good, and too easy not to share! Hey, if you spent all this time growing your own zucchinis, don't let them go to waste! I will give your my simple CBD tincture infused dipping sauce recipe at the end of this recipe, enjoy!


  • 1 medium zucchini
  • 1/4 cup all purpose flour
  • 1 large egg
  • 1/2 cup unseasoned breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder


  1. Heat 1/4" canola oil in pan on medium heat.

  2. Slice zucchini in 1/4" slices and set aside.

  3. Place flour, beaten egg, and breading mixture in 3 separate bowls.

  4. For the breading: combine breadcrumbs, parmesan, salt, pepper, garlic powder, onion powder.

  5. To bread zucchini slices, dredge each slice in flour (shake off excess), then dunk in beaten egg, then into breadcrumbs. Press firmly to make sure breadcrumbs stick to the slice.

  6. Once oil is heated, cook each zucchini slice for approximately 1 minute on each side or until golden brown.

  7. Remove from oil and drain on paper towel before serving with your favorite dipping sauce. 

    Diane's CBD dipping Sauce

1. 4 tbsp Ketchup 

2. 2 tbsp Mayo

3. 1 tbsp hotsauce

4. 3-4 droppers of Mint tincture

5. Stir well & serve!

There we have it! Easy and a healthy alternative to regular fries! Use your zucchinis for more than just bread this summer & feel good about yourself for making delicious veggie chips.
